Green Chile Chicken Enchiladas

INGREDIENTS
2 4 oz cans of Hatch Green Chiles(Hatch chiles are key to this regional delight)

1 can cream of mushroom soup (or comparable quantity of vegan mushroom soup)

¾ Cup Sour Cream (if you have dietary issues with dairy products, try a tofu replacement)

1 Lb. Colby Jack Cheese,  (or other cheese) shredded

Seasonings Salt, Pepper, etc. to taste (The flavor of the soup may determine seasoning)

1 Lb. cooked chicken, shredded  (Using deli cooked/shredded chicken can save time)

1 package corn tortillas (14-20 tortillas)

PREPARATION
Blend mushroom soup and sour cream together in large bowl. Stir in shredded cheese.
Add seasonings as desired and fold in shredded chicken.

BAKING
Prepare a deep baking dish
Spoon the filling into the center of individual tortillas, then roll and place in baking dish.
With all enchiladas in the pan, cover with remaining mixture and additional cheese as desired.

Bake at 325F for 25-30 minutes.

I met DelSheree Gladden by email when she contacted me to schedule an interview for the Write on Four Corners radio program she hosts on KSJE 90.9 FM. I had not done an audio interview in a couple of years and was rather nervous. She immediately put me at ease with her delightful voice and welcoming words! She has remarked that the program gives her pleasure in the wide variety of authors who speak about their careers and writing journeys. In addition to hosting the weekly radio show and teaching high school English, DelSheree is an author, who has written over 30 novels ranging in genre from Young Adult to contemporary romance and cozy mystery, to a new paranormal adult series. A native of New Mexico, she was a shy and quiet child who spent more time reading than talking. Her fascination with reading led to many hours in the library and bookstores before she officially turned to writing. She wrote her first novel at sixteen, but spent ten years rewriting it before it was published. Within many themes (and history and lore) she often features the Four Corners area of the Southwest, and has hit the USA Today Bestseller list twice. When not writing novels, she can be found hiking, sewing, working with other authors, and reading topics as varied as her own writing!
